Cooking oyster blade steak on the BBQ is easier than you think. Simply marinate for 20 mins, grill 2-4 mins per side on medium-high heat, and serve medium-rare after resting for a few minutes. Pretty simple, right? That’s the point!

At my local Coles, this is going for around $22 a kilo. In today’s market, that’s a steal for something so delicious, especially when cooked just right on the BBQ, so this recipe is definitely one to add to your repertoire.

BBQ Oyster Blade

Ingredients
  

  • 500 g oyster blade steaks (4 x 120g)

Marinade

  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp sugar
  • 2 tbsp Worcestershire sauce
  • 3 tbsp olive oil
  • 1 tbsp vinegar (balsamic or red wine)

Instructions
 

  • Combine salt, pepper, sugar, Worcestershire sauce, olive oil, and a splash of vinegar in a large dish or zip-top bag. Add the steaks, making sure they're fully coated. Let them marinate for 20 minutes at room temperature to soak up the flavours.
  • Heat your BBQ to medium-high. Take the steaks out of the marinade, letting any excess drip off. Cook them for 2 to 4 minutes on each side, or until they're done to your preference.
  • Move the steaks to a clean plate, loosely cover them with foil, and let them rest for 5 minutes. This step helps the juices redistribute throughout the meat.
  • Enjoy the steaks with your choice of sides, pouring over any juices that have collected while they were resting.

Notes
