How to Cook Oyster Blade Steak on the BBQ

Oyster blade steak cooking on the BBQ

Cooking oyster blade steak on the BBQ is easier than you think. Simply marinate for 20 mins, grill 2-4 mins per side on medium-high heat, and serve medium-rare after resting for a few minutes. Pretty simple, right? That’s the point!

At my local Coles, this is going for around $22 a kilo. In today’s market, that’s a steal for something so delicious, especially when cooked just right on the BBQ, so this recipe is definitely one to add to your repertoire.

  • 500 g oyster blade steaks (4 x 120g)

  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp sugar
  • 2 tbsp Worcestershire sauce
  • 3 tbsp olive oil
  • 1 tbsp vinegar (balsamic or red wine)

  • Combine salt, pepper, sugar, Worcestershire sauce, olive oil, and a splash of vinegar in a large dish or zip-top bag. Add the steaks, making sure they're fully coated. Let them marinate for 20 minutes at room temperature to soak up the flavours.
  • Heat your BBQ to medium-high. Take the steaks out of the marinade, letting any excess drip off. Cook them for 2 to 4 minutes on each side, or until they're done to your preference.
  • Move the steaks to a clean plate, loosely cover them with foil, and let them rest for 5 minutes. This step helps the juices redistribute throughout the meat.
  • Enjoy the steaks with your choice of sides, pouring over any juices that have collected while they were resting.

My Side Recommendations

You can’t go wrong with the standard sides of grilled veggies or a fresh salad.

To pair with your oyster blade, I can highly recommend the below sides for a delicious, well-rounded meal.

  • Smashed Potatoes — Steak and potatoes are the perfect combo. These smashed potatoes perfectly balance the rich, earthy flavour of the coffee rub steak and come together for a satisfying combination.
  • Whole Roasted Cauliflower — Along with smashed potatoes, roast up this cauliflower and you’ve got your veggie, meat, and starch for the perfect all-around meal.
  • BBQ Corn Ribs — Add a delicious twist on the familiar! Simple, easy, and packed full of flavour.

Aside from the price point, oyster blade steak has this rich taste and tenderness that’s just magnified when cooked on a BBQ.

It’s one of my go-to options for a laid-back, flavourful meal that doesn’t break the bank or require a chef’s touch (even though it didn’t make the top ten in our steak cut rankings). And cooked my way, medium-rare, it’s an absolute treat.
